How to measure buttermilk properly
Shake the carton. Cultured buttermilk thickens unevenly as it stands — the first pour can be thin and the last almost spoonable. A shake before measuring evens the consistency, and at 245 grams a cup the weight is dependable either way.
Weigh it with the wet ingredients. Buttermilk almost always joins eggs and oil in the same bowl. Put the bowl on the scale and add to 245 grams per cup — no jug, no meniscus, and the acid starts meeting the baking soda the moment you mix, as it should.
The emergency substitute, by weight. No buttermilk? Stir a tablespoon of lemon juice or white vinegar into a cup of milk — 245 grams of it — and wait ten minutes. It will not be as thick or as complex, but the acidity baking soda needs is there, and the weight is identical.
Frequently asked questions
How many grams are in a cup of buttermilk?
245 grams — identical to whole milk. Buttermilk's cultures thicken it and add acid, but they do not change its density, so milk and buttermilk conversions are interchangeable on this site.
How many grams is 250 ml of buttermilk?
About 259 grams, like milk: multiply millilitres by about 1.035. The 1 ml = 1 g rule belongs to water alone; dairy runs roughly 3.5 percent heavier.
Why do recipes use buttermilk instead of milk?
Acidity. Buttermilk's acid reacts with baking soda to raise batters, tenderises gluten, and adds a gentle tang. The weight is the same as milk — 245 grams a cup — but plain milk cannot do the soda's job, which is why the swap needs the acid trick in the tips above.
