How to measure sour cream properly
Spoon it in and level it — don't tamp it down. Sour cream holds spoon marks and air pockets. Spoon it into the cup, give the cup one gentle tap on the bench to settle any voids, and level the top: that is the 230-gram cup. Pressing it down like brown sugar packs in grams the recipe never asked for.
Stir the tub first. A little whey separates and pools on top of an opened tub. Stirred back in, the sour cream is uniform and weighs what the table says; left unstirred, your first scoop is watery and light and the last is dense.
Weigh small amounts by the spoon. Most recipes use two or three tablespoons — 14.4 grams each, call it 14 or 15. On a scale, dollop straight into the dish until you reach the gram figure; it is faster than washing a measuring spoon for every addition.
Frequently asked questions
How many grams are in a cup of sour cream?
230 grams, for regular full-fat sour cream. Light sour cream sits within a few grams of the same figure, and crème fraîche converts at the same weight too, so the table serves all three.
How many grams are in half a cup of sour cream?
115 grams — exactly half of the 230-gram cup. A quarter cup is 58 grams and a tablespoon is 14.4 grams, the three amounts that cover dips, dressings and dollops.
Can I substitute Greek yogurt for sour cream by weight?
Yes — swap gram for gram: 230 grams of Greek yogurt replaces a cup of sour cream with a very similar tang and body, just a slightly denser result. By volume you would need about ⅘ of a cup of Greek yogurt to match that weight.
