One cup of water weighs 236.6 grams — and since a US cup is 236.588 millilitres, water is the one ingredient where grams and millilitres are the same number. Every other liquid in the kitchen is measured against it. Below are water's conversion tables, a converter for any amount, and why serious bakers weigh their water instead of pouring it.

How to measure water properly

Grams equal millilitres — only for water. 250 ml of water weighs 250 grams, near enough that no kitchen scale can tell the difference. Use it as a free scale check: tare an empty jug, pour in 250 ml by the jug's marks, and the scale should read 250 grams. If it does not, the jug or the scale is lying.

Weigh the water in your dough. Hydration is a ratio of water weight to flour weight, and reading a meniscus in a jug is easily 10 ml out either way — on a small loaf, that is the difference between supple and slack. Poured onto the scale, the water is exact every time.

Temperature is a rounding error. Hot water expands and weighs a fraction less per cup than cold — well under one percent between fridge and kettle. In the kitchen it is beneath notice: weigh your water at whatever temperature the recipe wants.

Frequently asked questions

How many grams are in a cup of water?

236.6 grams — usually rounded to 237. Water defines the system: a US cup is 236.588 ml and a millilitre of water weighs one gram, so the cup's volume and weight are the same figure.

Is a cup of water 250 grams?

Only if your cup is a metric cup. A metric cup is 250 ml, so it holds 250 grams of water. A US cup is smaller — 236.588 ml — and holds 236.6 grams. Check which cup your recipe and your measuring jug are using; the 6 percent difference matters in bread.

How many cups is 500 grams of water?

About 2.11 cups. The maths is 500 ÷ 236.6 ≈ 2.11. For water you can skip the arithmetic entirely: 500 grams is 500 ml, so any measuring jug gives you the answer directly.
