How Many Grams in a Cup of Mascarpone?
One cup of mascarpone weighs 240 grams when spooned into the cup, pressed down to clear any air pockets and levelled off and this page converts mascarpone between cups, grams, tablespoons, teaspoons, millilitres and ounces, with full tables, worked examples and a free converter.

One cup of mascarpone weighs 240 grams. It is essentially solidified cream — over 40 percent fat — so it spoons like soft butter and holds whatever shape the tub gave it. That firmness makes cups unreliable and the scale essential. Below are the full conversion tables, a converter for any amount, and how to handle it.

How to measure mascarpone properly
Weigh it in spoonfuls, straight from the tub. Mascarpone is too stiff to pour and too soft to slice cleanly. Spoon it into the bowl on the scale until you hit the gram figure — 240 grams is a generous cup — and no measure gets coated in the process.
Do not overwork it. Mascarpone that is beaten hard or warmed turns grainy and can split into butter and liquid. Fold it into whipped cream or beaten eggs gently and at the last moment, and bring it just to cool room temperature — never warm it to soften it.
Tubs are metric; recipes are not. Mascarpone usually comes in 250-gram tubs. One tub is a shade over a cup (250 ÷ 240 ≈ 1.04), so a recipe calling for a cup uses nearly the whole tub, and a recipe calling for 500 grams wants two tubs almost exactly.
What changes the weight of a cup of mascarpone?
Mascarpone is a very soft, dense fresh cheese, and at 240 g it is one of the heaviest cup measures. Because it is spooned rather than poured or packed, the result depends on handling: spooned in loosely with folds and gaps, a cup can fall short of 240 g, while cheese pressed gently to level it reaches the full weight. It should not be stirred or beaten before measuring, because working it loosens its structure and can make it weep liquid. Weighing 240 g per cup is the reliable approach.
Mascarpone is made by curdling cream with acid, and brands differ in fat content and in how much whey remains, which changes firmness and richness. A very wet mascarpone measures differently from a firm one at the same volume. It also has no tang, unlike cream cheese, so the two are not flavour equivalents even though their cup weights are close — 240 g against 232 g.
Accuracy matters in tiramisu, where the mascarpone layer must be thick enough to slice cleanly; in mascarpone frosting, where too little cheese makes it slack; and in creamy pasta sauces, where the amount sets the richness. The most common mistake is treating mascarpone like cream cheese — scooping it loosely by the cup or swapping the two without weighing.
Frequently asked questions
How many grams are in a cup of mascarpone?
One cup of mascarpone weighs 240 g. One tablespoon weighs 15 g, so 4 tablespoons weigh 60 g, and half a cup weighs 120 g.
How many cups is 100 g of mascarpone?
100 g of mascarpone is about 0.42 cups, a little over two-fifths of a cup.
Can mascarpone be swapped for cream cheese by the cup?
The weights are close — 240 g per cup for mascarpone and 232 g for cream cheese — but the flavours differ: mascarpone is mild and rich, cream cheese is tangy. A swap works in some fillings but changes the taste and set.
Why did my mascarpone turn runny when measured?
Mascarpone breaks down if it is stirred or beaten on its own, releasing liquid and losing body. Spoon it gently straight from the tub, or weigh out 240 g per cup without working it first.
