How Many Grams in a Cup of Cornstarch?

One cup of cornstarch weighs 112 grams, spooned into the cup and levelled off. Cornstarch — cornflour in British recipes — is a fine powder that compacts hard, so a scooped or shaken cup can weigh far more than the standard. Below are the conversion tables, a converter for any amount, and how to measure it without packing it.

How to measure cornstarch properly

Never scoop it. Cornstarch packs like wet sand: dip the cup in and it compresses, and a scooped cup can weigh 20–30 grams over the standard 112. Spoon it in loosely, level it off, and for the spoon-sized amounts sauces actually use — one tablespoon is 7 grams — weigh it if the sauce matters.

Slurry first, always. For sauces and gravies, mix cornstarch with an equal amount of cold liquid before it meets anything hot, or it sets into lumps on contact. The slurry goes in at a boil, and the sauce thickens as it returns to the boil — then take it off, because long boiling thins a cornstarch sauce again.

Cornstarch is not corn flour. In the UK, “cornflour” is exactly this white starch. In the US, “corn flour” is a different product — finely ground whole cornmeal, yellow and gritty by comparison. The two do not substitute for each other; check which side of the Atlantic your recipe comes from.

Frequently asked questions

How many grams are in a cup of cornstarch?

112 grams, spooned into the cup and levelled off. Because cornstarch compacts so readily, that figure assumes a loose fill; a scooped, packed cup can weigh considerably more, which is why the spoon quantities below are worth using.

How many grams are in a tablespoon of cornstarch?

7 grams. A teaspoon is about 2.3 grams. Most sauce recipes use one or two tablespoons, so these small numbers do the real work: one tablespoon of cornstarch thickens roughly 250 ml of liquid to a light sauce consistency.

How many grams are in half a cup of cornstarch?

56 grams — exactly half of the 112-gram cup. Half a cup is a large amount of cornstarch, used in some frying coatings and starch-heavy batters; for sauces, work from the tablespoon figure of 7 grams instead.
