How Many Grams in a Cup of Cake Flour?
One cup of cake flour weighs 113 grams, spooned into the cup and levelled off. Milled very fine from soft wheat, it clumps and compacts more readily than all-purpose flour, which changes what a cup holds. Here are its full conversion tables, a converter for any amount, and how to measure it without packing it down.

How to measure cake flour properly
It compacts if you look at it. Cake flour's fine particles settle into a dense mass, so never scoop it: fluff it in the container, spoon it gently into the cup and level off without tapping or shaking. A packed cup can overshoot 113 grams by enough to toughen the crumb it was chosen to keep tender.
Sift — but notice when. Cake flour clumps in storage, and many recipes call for sifting. “1 cup sifted cake flour” means sift before measuring; “1 cup cake flour, sifted” means measure 113 grams first. When in doubt, weigh: the gram figure is the same either way.
Make your own in a pinch. For each cup, take a spooned cup of all-purpose flour (120 grams), remove 2 tablespoons, and whisk in 2 tablespoons of cornstarch — roughly 105 grams of flour plus 14 grams of cornstarch. Sift the mixture twice and it behaves convincingly like cake flour.
Frequently asked questions
How many grams are in a cup of cake flour?
113 grams, spooned and levelled. That is 7 grams less per cup than all-purpose flour (120 grams), because cake flour is milled from soft, low-protein wheat and ground finer, so it sits more loosely in the cup.
How many grams are in 2 cups of cake flour?
226 grams. Doubling is exact with weights: 2 × 113 = 226. If you are measuring by volume instead, spoon and level each cup separately rather than scooping twice — cake flour compacts more with every press.
What is the difference between cake flour and all-purpose flour?
Protein and weight. Cake flour has 7–9 percent protein against all-purpose's 10–12 percent, so it forms less gluten and bakes a finer, tenderer crumb. By volume it is also lighter: 113 grams per cup against 120 grams, which is why the two are not interchangeable by the cup.
