How Many Grams in a Cup of Short-Grain Rice?
One cup of uncooked short-grain rice weighs 200 grams — the heaviest rice in this database, because the plump grains pack with barely a gap between them. This is the rice of risotto, sushi and paella. Below are the full conversion tables, a converter for any amount, and how weighing sharpens all three dishes.

How to measure short-grain rice (uncooked) properly
Weigh it dry — especially for sushi. Sushi rice is ruined by excess water left from rinsing. Weigh the dry rice first (200 grams a cup), then wash it until the water runs clear, drain it well, and add cooking water by weight: roughly the rice's own weight in water is the usual starting point.
Risotto runs on ratios too. Arborio is the short-grain rice this table is built on. A standard portion is about 80 grams of dry rice per person, and it will drink roughly three times its weight in stock as it cooks — added gradually, which is why the cook's job is ladling, not measuring.
The cooker cup strikes again. A Japanese gō measure (180 ml) of short-grain rice weighs about 152 grams — nowhere near a 200-gram US cup. Sushi recipes bounce between the two systems constantly; weighing the rice ends the confusion permanently.
Frequently asked questions
How many grams are in a cup of short-grain rice?
200 grams for short-grain white rice — arborio, carnaroli, sushi and pudding rice — against 185 grams for long-grain. The rounder grains nest together with less air in the cup, and the 15-gram difference per cup is enough to change a risotto.
How many grams are in half a cup of short-grain rice?
100 grams exactly — half of the 200-gram cup, and a tidy figure: 100 grams of dry short-grain rice is a generous portion for one person in a risotto or a rice pudding.
How many cups is 250 grams of short-grain rice?
Exactly 1¼ cups (250 ÷ 200 = 1.25). Rice is one of the easiest ingredients to convert by weight because the grain is uniform — a scale and this table agree to the gram.
