How to measure pumpkin purée properly
Learn the can. The standard can of pumpkin purée is 15 ounces — 425 grams — which is 1¾ cups by this table, not the 2 cups many recipes assume. A recipe calling for 'one can' wants 425 grams; a recipe calling for 2 cups wants 490 grams, which is a can plus about 4 tablespoons (65 grams).
Purée is not pie mix. Canned 'pumpkin pie mix' is purée pre-mixed with sugar and spices. It weighs close to the same per cup, but using it where a recipe expects plain purée doubles the sweetening. Check the can's front, not just its size.
Homemade purée runs wetter. Purée you make from a roasted pumpkin usually carries more free water than the dense canned kind, so a cup of it can bake up looser. Drain it in a sieve for half an hour and it approaches the canned standard the 245-gram figure assumes.
Frequently asked questions
How many grams are in a cup of pumpkin purée?
245 grams, for canned plain pumpkin purée — the dense, smooth kind sold for pies. It matches milk's 245 grams a cup exactly, which makes it easy to remember through the autumn baking season.
How many cups are in a 15 oz can of pumpkin?
About 1¾ cups. The can holds 425 grams and a cup is 245 grams (425 ÷ 245 ≈ 1.73). The persistent myth that the can is 2 cups leaves pies 65 grams short.
How many grams are in half a cup of pumpkin purée?
123 grams (half of 245, rounded). A tablespoon of pumpkin purée weighs 15.3 grams — the same as milk — useful for the few spoonfuls that go into lattes, soups and snacks.
