How to measure molasses properly
Oil the cup first. Molasses clings harder than honey. Measure the recipe's oil in the cup first, or wipe the cup with oil, and the molasses pours out almost completely. Better still, weigh it straight into the bowl: 328 grams, no residue, no scraping.
Warm a cold jar. Molasses thickens in a cold cupboard until it barely pours, and a half-poured measure is a wrong measure. Ten minutes with the jar standing in warm water brings it to pouring consistency — the weight per cup does not change with temperature.
Know your grade. Light, dark and blackstrap molasses all weigh the same 328 grams a cup. What changes is bitterness and mineral content: blackstrap is the third boiling, dark and almost savoury. Gingerbread recipes usually mean dark; blackstrap will dominate a delicate recipe.
Frequently asked questions
How many grams are in a cup of molasses?
328 grams, for light or dark unsulphured molasses — and for British black treacle, which is the same thing. Only a few syrups outweigh it per cup: corn syrup at 341 grams, honey at 340 and agave nectar at 329.
How many grams are in a tablespoon of molasses?
20.5 grams — call it 20 or 21. A teaspoon is 6.8 grams. Molasses is measured in spoonfuls more often than cups, and a heaped spoon of a syrup this heavy is a real error, so level it or weigh it.
How many grams are in half a cup of molasses?
164 grams — exactly half of the 328-gram cup. Half a cup is the classic gingerbread amount; weighed into the bowl after the oil, it leaves almost nothing behind.
