One cup of cocoa powder weighs 84 grams — the lightest cup in this index. Cocoa is a fine powder that puffs up, settles and compacts unpredictably, so its cup measures wander more than most ingredients'. Below are cocoa's conversion tables, a converter for any amount, and how to measure it so a cake comes out the same twice.

How to measure cocoa powder properly
Spoon and level, like flour but lighter. Cocoa scooped straight from the tin compresses badly — a scooped cup can pass 100 grams against the standard 84, and the cake turns bitter and dry. Spoon it in, level it off, and the number holds.
Sift it with the flour. Cocoa clumps into pellets that survive mixing and bake into bitter pockets. Sifting it together with the flour and sugar after weighing breaks the lumps and disperses it evenly — weigh first, because sifted cocoa measured by volume is lighter still.
Spoons are where cocoa goes wrong. A level tablespoon is just 5.3 grams, and a casually heaped one can be 9 grams — nearly double. In recipes built on two or three spoonfuls, that error is the whole difference between rich and harsh. Weigh cocoa whenever the amount is small.
Frequently asked questions
How many grams are in a cup of cocoa powder?
84 grams, spooned and levelled, for unsweetened cocoa powder — both natural and Dutch-process, which weigh the same per cup. It is the lightest cup in the GramChef database: less than half the weight of a cup of sugar.
How many grams are in a tablespoon of cocoa powder?
5.3 grams level, and about 1.75 grams in a teaspoon. Cocoa is where level spoons matter most: the powder mounds so easily that a heaped tablespoon can carry almost twice the intended amount.
How many cups is 100 grams of cocoa powder?
About 1.2 cups (100 ÷ 84 ≈ 1.19). Because cocoa compacts so unpredictably by volume, treat the cups as a rough guide and trust the 100 grams — especially in flourless cakes, where cocoa is doing the flour's job.
